The Eye fillet as It’s known In Australia and New Zealand, known as a beef tenderloin In the USA. fillet in South Africa and the UK. and filet In France and Germany. Is cut from the loin. The muscle does very little work, so It is the most tender part of the beef. Highly recommended.
Sirloin 250 grammes $32.00
In Australia this Cut is known as a porterhouse or boneless sirloin. Cut from the short loin, the strip steak consists of a muscle that does little work, and so It Is particularly tender, although not so tender as the nearby rib eye or tenderloin (eye fillet) and fat content of the porterhouse Is somewhere between these two cuts.
